Ingredients
Method

2 cups flour

1.5 cup sugar

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

3 eggs

70 gr melted butter

2/3 cup lime juice

¾ cup sour cream

Step 1
Whisk eggs and sugar until light and creamy

Step 2
Add butter, lime juice and sour cream in turn. Whisk until they incorporate completely.

Step 3
Sift dry ingredients to the batter and fold to reach smooth batter.

Step 4
Let the cake bake in 175C preheated oven for 40 minutes.

Step 5
Let the cake cool in room temperature and serve with lemon curd.

chocolate mousse cake
Ingredients
Method

for the cake:

6 eggs

250gr flour

50 gr cocoa powder

160 gr hot water

200 gr sugar

2 tsp. baking powder

1 tbsp. vanilla

18cm cake tin

for the chocolate mousse:

200 gr melted chocolate

2 egg yolk

1.5 tsp. powdered gelatin

80 gr milk

250 gr whipping cream

200 gr cream cheese

50 gr sugar

1 tsp. vanilla

¼ cup hot water

2 tbps. Nescafe

for the cake:

Step 1
Beat egg whites with 2/3 of sugar until soft peak.

Step 2
Beat 1/3 of sugar with egg yolks and vanilla until light and creamy.

Step 3
Add oil, water and Nescafé and mix until fully incorporated.

Step 4
Sift dry ingredients to step 2 and fold gently.

Step 5
Add step 1 in three parts and fold gently until fully combined.
Step 6
Pour the batter in 18cm cake tin and let it baked in 180C preheated oven for 45minutes.

for the chocolate mousse:

Step 1
Melt the gelatin powder with milk in the microwave or by bain-marie method.

Step 2
By bain-marie method simultaneously mix and cook sugar, egg yolks and vanilla to reach a stretchy mixture then incorporate melted chocolate.

Step 3
Beat heavy cream and cream cheese for a couple of minutes.

Step 4
Mix Nescafé with hot water.

Step 5
Incorporate everything together.

Assemble
put chocolate cake in a spring cake tin and pour chocolate mousse mixture on top of it and let it set over night in the fridge.

Ingredients
Method

2 cups flour

1 cup shredded coconut

½ cup molasses

100 gr butter

½ cup vegetable oil

1.5 cup sugar

1 tsp. cardamom

4 tbsp. saffron

4 tbsp. rose water

Walnut and shredded almond optional

Step 1
Grease bottom of your preferred pan with butter.

Step 2
Put half of the shredded coconuts and walnuts at the bottom of your pan.

Step 3
Heat milk and sugar until sugar dissolves. Add oil, saffron and molasses and let it boil.

Step 4
Sift flour and cardamom and add to the mixture and mix until it thickens. Then add the butter.

Step 5
Pour halwa batter in your pan, put the remaining shredded coconuts and almonds on top of the batter.
Step 6
Cook it in 155C preheated oven for 25 minutes. Grill top of the halwa for 2-3 minutes until golden.
