for the cake:
Beat egg whites with 2/3 of sugar until soft peak.
Beat 1/3 of sugar with egg yolks and vanilla until light and
creamy.
Add oil, water and Nescafé and mix until fully incorporated.
Sift dry ingredients to step 2 and fold gently.
Add step 1 in three parts and fold gently until fully combined.
Pour the batter in 18cm cake tin and let it baked in 180C
preheated oven for 45minutes.
for the chocolate mousse:
Melt the gelatin powder with milk in the microwave or by
bain-marie method.
By bain-marie method simultaneously mix and cook sugar, egg
yolks and vanilla to reach a stretchy mixture then incorporate
melted chocolate.
Beat heavy cream and cream cheese for a couple of minutes.
Mix Nescafé with hot water.
Incorporate everything together.
put chocolate cake in a spring cake tin and pour chocolate
mousse mixture on top of it and let it set over night in the
fridge.
